I am a coffee-drinker. I used to have all the sweet pastries, pancakes, waffles, or anything that went great with coffee. I was sometimes trying to cheer myself up with these sweet treats before crazy days with my boys started! After my fitness journey started, I was seeking other alternatives that still satisfied me. This is one of my favorite breakfasts. The sweetness of bananas and protein powder go perfectly with coffee, and I get so much energy to start my great day!

Please use the numbers as a general guide only as the nutrition information may change based on what you use exactly. For my protein, I use “Gold Standard 100% Whey Double Chocolate flavor”. You can use your favorite protein powder and flavors!
Instruction:
- Mash bananas throughly
- Add egg and mix well
- Add protein powder and baking powder and mix well
- Pour the batter into a heated pan.
- Cook thoroughly, 1 minute or so on each side.
You have the option of topping the pancakes with berries or another favorite fruit. To increase the amount of carbohydrates, you can add thirty grams of oat powder. (I generally use my Vitamix blender to ground my oat meal). Thirty grams of oat powder have about twenty grams of carbohydrate, and that makes the total amount of carbohydrate 51 grams and the total calories 412.5 kcal. That would also make a fantastic pre-snack for your leg day!
This recipe is following my 20-10-35 rule.
Enjoy your protein pancake!
